I detest kale. Let me say that one more time people. I totally detest Kale. I have seen these all over the web and always thought to myself what a waste of time. Well, I am the first to tell you I was wrong. Remember Miah my son who indulges in the Standard American Diet, he took a tiny, minuscule bite and said, Oh man those are good but I have to close my eyes cause they are GREEN! Kale lovers make me green with envy because Kale is probably one of the most nutritious foods in the world. Meaning this natural lovin, food density girl should love it but I sooooooo do not. Until that is, Kale Chips came into my life. They are light and crunchy and airy and you seriously cannot eat just one. I ate the whole cookie sheet and had no guilt cause they are approved. Did you hear that Candida approved. Candida Sufferers Unite we have a dang salty snack that tastes really good and will not increase the levels of candida that we are trying to get in balance. That makes me a happy women. Ok, not as happy as leaving Sephora after Micheal had painted my face with all sorts of pretty colors but almost that happy.
Baked Kale Chips
1/2 teaspoon really good sea salt salt
3 large handfuls kale, torn into shreds
1 to 2 tablespoons extra-virgin olive oil
1/2 lemon fresh lemon juice
This is a no-brainer recipe. You need to make sure the Kale is totally dry. That way you can get a really good crunch. Mix the oil and seasoning over the kale that you have torn into bite size pieces and sprinkle the salt on.Then squeeze 1/2 of a lemon. At that point put them on a cookie sheet. I used parchment paper cause I do so not like washing cookie sheets. You do not have to though. Bake in a preheated oven at 350 degrees. Here is a secret. If they start to go brown they will taste bitter. So make sure you start watching them at about 8 minutes out. Mine took about 11 minutes to Baked Kale perfection. You could even season them up with garlic or paprika or anything else that suits your fancy. Tell me how they turned out and which was your favorite flavor.
Okay so you would be so proud of me! We got a Vita Mix today and we were looking for some fun smooties recipes. I ran across one that had Kale in it. Since i had Kale on the counter (ready for me to make the kale chips) I decided to make the smoothie. It had a cup of Kale in it with a cup of non sweetened raspberries to a cup and a half of water. It was so good! And it made it even better now knowing how good kale is for you! Now my only problem is Ill have to go back to the store to buy more kale for the chips! :)
